Galileo Maritime Academy is seeking an experienced and responsible Senior Cook to independently manage our small academy kitchen at Yacht Haven Marina, Mai Khao, Phuket.

This is more than a food-preparation position. The successful candidate will take ownership of the kitchen operation, including:

• Planning weekly Thai and international menus
• Preparing breakfast and lunch, with dinner on some scheduled days
• Creating balanced and nutritionally appropriate meals
• Managing food costs and portion control
• Monitoring stock and reducing food waste
• Preparing orders and coordinating with suppliers
• Maintaining food hygiene and temperature-control standards
• Keeping the kitchen clean and organised using clean-as-you-go practices
• Ensuring meals are prepared and served on time
• Managing the kitchen independently without daily supervision

Candidate requirements:
• Relevant professional kitchen experience
• Able to independently manage a small kitchen
• Knowledge of budgeting, stock control and food safety
• Basic English communication skills
• Reliable transportation to Mai Khao
• Reliable, organised and able to take ownership of the role

Working conditions:
• Six working days and one day off per week
• Salary based on experience, ability and level of responsibility
